PURPOSE OF THE POSITION:

The purpose of this position to oversee and enhance the overall food and beverage experience by coordinating the small F&B outlets operations, deliver quality and produce outstanding employee and guest experience. Actively drive revenues, optimise the asset, maintain high standards of cleanliness and hygiene, protect a grow the outlet brands, and closely monitor and manage the prime cost, and ultimately the profitability of the outlets.


Key Performance Areas:

  • Play an impactful role in ensuring that Quality Control is exercised by the supervisory team as well as the generality of the team.
  • Ensure total guest experience in all outlets allocated, e.g. banqueting, Café Mole, Welwitschia, Room Service, Pastry, and main kitchen).
  • Manage cost of sales to targeted levels, through a clear understanding of the Cost of Sales value chain and ensuring that every stage of the COS value chain is monitored, analysed on an ongoing basis.
  • Adhere to QA, CX, and HACCP standards at all times.
  • Understand and drive the targeted operational key efficiency ratios, e.g. GOP%, prime cost ratio, cost of sales ratio, payroll ratio, open ratio, breakeven point, contribution margin, etc.
  • Spent time upskilling the team in order to drive operational efficiencies.
  • Design conference packages and ensure correct billing of conferences and events.
  • Participate in menu design for conference packages, including costing and pricing.
  • Oversee the banqueting guest experience at every touch point, including planning thereof.
  • Oversee the quality and upkeep of assets in all allocated outlets.
  • Supervise the quality of pastries and the entire activities of the pastry department.
  • Oversee and supervise the quality, level of cleanliness and hygiene, HACCP activities, and production of food in the main kitchen.
  • Supervise and drive the throughput time at Café Mole, including the quality and customer experience.
  • Ensure tight controls and SOPs are in place in all allocated outlets and that they are strictly enforced.
  • Ensure that the WWL is well attended to at all times, and that it provides that professional/polished and attentive service at all times.
  • Retrieving data. Wait a few seconds and try to cut or copy again.
  • Always ensure creativity in pastry department, including enhancing the quality of the cake section and desert sections of our menus to world class levels.
  • Ensure that recruitment, selection, and placement activities are aligned with the Brand goals and objectives- recruit, select and place attitude and persona at the forefront.
  • Manage, train, mentor and develop all staff performance on a continuous basis and conduct formal staff appraisals as required.
  • Drive the Persona and use it as a lever to drive employee motivation and performance.
  • Constantly monitor and check the quality-of-service delivery towards the guests and make sure the processes are speaking to the brand and the provided quality guideline.

QUALIFICATIONS & EXPERIENCE:

  • Min National Diploma in Restaurant Management, Hospitality/ Hotel Management or Business Administration .
  • 6-8 years’ experience in restaurant management, with a focus on banqueting, room service, and collaboration with kitchen operations.
  • Computer literate in Microsoft (MS Excel, Word, & PowerPoint)
  • Knowledge of budgets, ordering, profit & loss, prime cost,
  • Knowledge of prime cost management, costing and employee scheduling and overtime.
  • Knowledge of Micros/Opera/MC/Jarrison will an advantage.
  • Beer or Barista Training will be an added advantage.
  • Wine Sommelier course will be an added advantage.
